A useful fit for

An exact-model reference for identifying a discontinued Cuisinart SM-55 or checking a used listing against its 5.5-quart bowl, 15-minute timer, three accessory outlets and 12-cup bread-flour limit; not a current buying recommendation.

The main tradeoff

Cuisinart marks the exact SM-55 page discontinued and out of stock. The 5.5-quart bowl and 12-cup flour maximum are lower than the SM-70's 7-quart and 15-cup figures, while used condition, included parts, accessory availability and warranty transfer remain unknown.

Your needs, this model

Does it fit your priorities?

Is a current 5.5-quart tilt-head setup with a documented dough-hook package more important than the old timer?

The SM-55 has a handled stainless bowl, dough hook, 12 speeds and a 15-minute timer, but Cuisinart marks it discontinued and out of stock. The current SM-50NAS offers a similarly sized tilt-head package but its own page does not confirm the old SM-55 timer.

Will you follow the SM-55 booklet's 12-cup flour maximum instead of using its bowl label as a dough estimate?

The SM-55's exact maximum-capacity table lists 12 cups flour for most yeast breads and pizza. It does not specify white flour; its 12-cup figure is a different measure from the SM-50's six-cup white-flour limit and from the SM-70's 15-cup flour maximum.

Do you need the SM-55's powered outlets or its separate lowest-speed Fold control?

The SM-55 booklet describes three outlet positions for separately purchased attachments and a Fold button that operates at the lowest speed by continuous hold or short pulses. It is not a separate half-speed fold setting, and the manual says not to use more than one optional attachment at a time.

A discontinued 5.5-quart reference

Cuisinart’s SM-55 is a white, tilt-back stand mixer with a handled 5.5-quart stainless-steel bowl. The exact U.S. product page marks it discontinued and out of stock, so use this review to identify a machine or check a specific used listing—not as a current purchase recommendation. The model code alone cannot establish that an older unit is complete, in safe condition or covered by a transferable warranty.

The SM-55 sits between two related Cuisinart references: the current five-and-a-half-quart SM-50NAS and the larger discontinued seven-quart SM-70. All three use a tilt-back head, but the SM-55 and SM-70 have the countdown timer and three powered accessory outlets that the SM-50 page does not confirm. Their manuals also state different preparation maxima. The SM-55 lists 12 cups of flour for most bread and pizza dough, 10 dozen cookies, six cups of whipping cream and 12 egg whites. The SM-70 lists 15 cups flour, 15 dozen cookies, eight cups cream and 16 egg whites. Those are exact manual figures for named jobs, not independent test results or proof that every recipe works at the maximum.

Capacity is not the same as an everyday batch

The 12-cup flour line is the key distinction for bread planning. It does not say “12 cups white flour,” so keep its wording separate from the SM-50NAS manual’s six-cup white-flour measure. It is also not a weight recommendation: flour settling, recipe hydration and dough texture affect the load. The manual describes task-based speeds and lists yeast-dough kneading at speed 3; follow the directions for the recipe in front of you rather than converting that single guide entry into a blanket rule for every dough.

For cookies, cream and egg whites, the SM-55 booklet’s 10-dozen, six-cup and 12-egg maxima provide useful reference points when verifying a used machine’s instructions. They do not promise that a small batch will reach the whisk or that all recipes can be scaled to the top number. If frequent large bread batches are the reason you are looking at a used SM-55, compare its own 12-cup table with the SM-70’s separate 15-cup listing and inspect the machine, bowl and tools in person before deciding.

Timer and Fold controls

The mixer has 12 dial speeds and a 15-minute countdown timer with automatic shutoff. You set a speed and time, start the mixer, and both run together. The manual says the mixer stops when the count reaches zero; you can pause to scrape or add ingredients, resume the remaining time, and adjust the timer while paused. If nothing is done for five minutes, the countdown resets and the unit shuts off. The feature can help follow a recipe’s planned mix interval, but it is not a reason to leave the bowl unattended or assume the mixture is ready when the timer ends.

Its Fold control is a separate low-speed function. Cuisinart’s booklet describes continuous folding while the button is held or brief pulses of about one-and-a-half to two-and-a-half tool revolutions each. That is not the separate half-speed fold setting used on some KitchenAid Artisan Plus models. If a 1/2-speed fold is essential, select that specific option rather than treating all products with a button labeled FOLD as equivalent.

Tools, outlets and cleanup

The standard package comprises a chef’s whisk, flat mixing paddle, dough hook and splashguard with pour spout. The manual assigns the paddle to batters, cookies, cakes and starting bread dough; for yeast dough it suggests changing from paddle to hook after a thick, smooth batter forms. The whisk is for incorporating air. The tilt-back head locks upright for bowl or tool access, and the handled stainless bowl is hand-washable or dishwasher-safe. The tools and guard are top-rack safe; wipe the power unit with a damp cloth and never immerse it.

Three powered outlets support optional attachment types at different speeds, such as a blender or food processor at the high-speed port, a citrus juicer at the mid-speed port and a grinder or pasta maker at the slow-speed outlet. These accessories are separate purchases, not part of the standard mixing kit. The safety section says not to use more than one attachment at a time. Before paying for a used SM-55, confirm that the specific outlet covers, tools, bowl and any desired compatible attachment are present and intact. A three-outlet mixer does not mean three devices can run together.

Choose among the Cuisinart versions

The current SM-50NAS has the same nominal 5.5-quart bowl size and tilt-back access, but its page lists one powered hub and does not establish the SM-55’s timer. Its manual’s six-cup white-flour limit should not be swapped with the SM-55’s 12-cup generic flour figure. The SM-70 keeps a 15-minute timer and three outlets but increases the bowl to seven quarts and gives higher maximums in its own table. Neither retired model is a buying result, and no current alternative in this library is represented as a feature-for-feature replacement.

Choose the SM-55 assessment when you already have the exact model or are considering a particular used machine. In the finder, its 5.5-quart bowl, dough hook, powered outlets and timer are real specifications, but its reference-only lifecycle keeps it out of purchase matches even if all those choices fit. If the timer or 12-cup dough figure is essential, a zero current match is more honest than substituting an unknown feature on another mixer. No current stock, used condition, replacement-part supply, motor wattage, dimensions or warranty transfer has been established here; this is not a hands-on review.
